Kidney Bean Curry

Fiber picked, plant based protein, and inflammation fighting meal? UM yup I’m all in!! Tell me it takes 15-20 minutes. SOLD. In love with this fast, delicious recipe and hope you all enjoy it as well!!

The DEETS below!


INGREDIENTS

  • 1, 16 oz can low sodium red kidney beans, rinsed

  • 1, 16 oz can low sodium diced tomatoes

  • 1/2 small onion, diced

  • 1/2 red bell pepper, diced

  • 4 garlic cloves

  • 1 tsp grated fresh ginger

  • 1 tbsp curry powder

  • 1 tsp turmeric

  • 2 tsp cumin

DIRECTIONS

  1. In a pan heat up avocado oil, garlic, ginger, and onion on medium/high heat. Cook until translucent.

  2. Add in bell pepper, spiced, and diced tomatoes. Cook on medium heat covered stirring frequently.

  3. When bell pepper is tender add in rinsed kidney beans. Cook for a few minutes to incorporate the spices of the sauce.

  4. Enjoy with a side of bismati rice or brown rice!

That’s it!! Easiest week day meal ever!
